A Girls Two Best Friends

Well I am off again…. On my next travel adventure to Washington DC for a girls weekend with my besties. It is a long over-due trip, Sandy has been out in DC for going on 3 years now and neither, Sheena nor I have not been out to visit. Not that we haven’t tried (I mean we haven’t tried hard) but Sandy is a teacher so long weekend trips are off and we seem to have completely opposite schedules. She has quite a bit of time off over the holidays and spring break. Which happens to be quite possibly the most inconvenient time to travel as a childless adult. Love kids, just not navigating a crowded airport with the pint-size flyers. Don’t get me wrong, I sympathize, I just don’t have to deal with it yet, so I avoid it. And we have postponed our girl’s weekend for months and years because it wasn’t a good time. Continue reading


April is International Letter Writing Month

imageFor anyone who did know (I didn’t) April is international letter writing Month. I know I am a little late to the game, but I am taking the rest of the month to do a better job of writing and mailing letters to family and friends. You know the feeling that you get when you flip through the sterile white envelopes and all of sudden… something other than a bill. It will honestly make your recipients day. Cheesy hash brown potatoes


Easter was a few weeks ago, it is one of my favorite holiday’s mostly because I get to see my family do stupid Easter related stunts and games which involve ultimately one team winning the coveted Easter bunny trophy- this year nick names humpy. I also love this holiday because of the amazing cheesy potatoes, which I would like to share with Now as anyone who has read my recipe posts know, I don’t really do measuring, I do estimating and I am totally okay swapping out items if it means I don’t have to make an extra trip to the grocery store. I am also a fan of EASY meals. My family always wonders why I am always eager to volunteer to make these lovely potatoes, well the cat is out of the bag, they are so simple and easy and always a crowd pleaser.

So here we go— my not secret super easy Cheesy Hash Brown Potatoes
• One bag frozen hash browns (usually 28-32oz)
• Two cups cheddar cheese
• One can cream of chicken soup
• One small container of top the tator
• Couple handfuls of cornflakes
• ½ cup melted butter (that’s one stick)
• One stem of green onions- if I have them

Preheat the oven to 350, now mix everything but the cornflakes together. Toss everything into a cake pan, top with lightly crushed cornflakes, cover with tin foil and pop in the oven. Now go back to bed for 40-45 minutes, or catch up on Netflix. Take the tin foil off and bake for another 10 minutes until the top is nice and crispy.
That’s it. Seriously, it takes no time and most of the ingredients are in my pantry. When they are not swap out your cheddar cheese for whatever is left in your fridge drawer, no cream of chicken soup, cream of mushroom, chicken noodle… chicken and rice- I have used it all. No Top The Tator- while this might be the one item I will make a special store run for, you can use sour cream. I have skipped the butter and onions before and used Chex mix instead of cornflakes when I didn’t have any open. This recipe is also easily tweakable to be gluten free if there are any allergies.


2016 New Year Resolutions- Spring Progress Report

Every year one of my best friends Sheena and I set out to make New Year Resolutions. This year was no different, this year we sat at Bar La Grassa, drinking wine and stuffing our face with pasta, if you live in the twin cities and have never been, go! But make a reservation first or take your chances and get a spot at the pasta bar to watch the chefs prepare the house made pasta and dishes! Back to the New Year’s Resolutions and updates.


  • Work out 3x per week- Hello I have a wedding dress to get into. This should be a top priority for me!!

Progress so far: I joined a new gym (which I love) and have only missed one week of going to the gym or exercising 3 times a week. I haven’t seen the trimmed down figure that I want, but it takes time.

  •  Start a blog- I have tried to start a blog before, but kept getting side tracked. 2016 will be the year.

Progress so far: Well you are reading this right? I guess that means I committed and started a blog, and since this is the quarter one update- that would mean I made it a promising 3 months! Which might be longer than any of my other attempts. Next step for this goal, build my followers and viewership.

  • Travel a lot: This was on my list before I knew I was getting married, so we will use “a lot” loosely.

Progress so far:  Long weekend in Virginia, in the Yurt (March) and a girls weekend to Washington DC (April), wedding in Wisconsin (June) Ohh and then there is that little thing called a honeymoon that we are still planning for the fall.

  •  Get Married: Yep this is on my list for 2016!  


Progress so far: I still have a fiancé and the date, location, colors are all set and my wedding dress has been ordered. I think the progress speaks for itself.

  • Read Twelve Books: Does Vogue and People count?


Progress so far: So far not so good. Based on my math, 12 books, 12 months—I should be finishing up novel number three right about now. And I just finished book one.
